Slow Cooker Sweet Teriyaki Chicken

INGREDIENTS: 

  • 2 lbs boneless, skinless chicken thighs (drumsticks work great as well)
  • 2 cloves minced garlic
  • 1 cup diced onion
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • ½ cup honey
  • ¼ tsp pepper
  • ¼ tsp salt
  • 1 to 1/2 Tbs fresh grated ginger
  • ¼ cup water
  • 2 Tbs cornstarch

 

DIRECTIONS: 

  1. Put everything in The slow cooker except water and cornstarch.
  2. Cook on low for 2-3 hrs.
  3. When done, remove the chicken and cut it into bite-size pieces.
  4. In a small bowl, mix water and cornstarch and stir into sauce in the slow cooker.
  5. Stir chicken back in and and cook for another 20 minutes then enjoy!

FREEZER MEAL: Label a gallon freezer bag and add all ingredients except water and cornstarch. On cooking day add water and cornstarch.  Remove the remaining air out of the bag and seal.  Lay flat in the freezer.
