INGREDIENTS:
- 1 cup rolled oats
- 1 -1/2 cups of all-purpose flour
- 1 -1/2 tsp baking soda
- pinch of salt
- 2 eggs
- juice and zest of one lemon
- 1/2 cup oil
- 1/2 cup milk
- 1/2 cup sugar
- 1 tsp vanilla
- 1 cup raspberries
DIRECTIONS:
- Have your oven preheated to 375F.
- Line or grease your muffin tray
- in a bowl, and mix together the wet ingredients. The eggs, lemon juice, zest, oil, milk, sugar, and vanilla.
- In a small bowl, combine the oats, flour, baking soda, and salt.
- Combine the dry ingredients with the wet and mix until well combined.
- Fold the raspberries. Frozen raspberries are also a great substitute.
- Spoon the mixture into the muffin tray and bake for 15-20 minutes until golden brown.
- Allow to cool and enjoy!
