Raspberry Lemon Muffins

INGREDIENTS:

  • 1 cup rolled oats
  • 1 -1/2 cups of all-purpose flour
  • 1 -1/2 tsp baking soda
  • pinch of salt
  • 2 eggs
  • juice and zest of one lemon
  • 1/2 cup oil
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 cup raspberries

 

DIRECTIONS:

  1. Have your oven preheated to 375F.
  2. Line or grease your muffin tray
  3. in a bowl, and mix together the wet ingredients. The eggs, lemon juice, zest, oil, milk, sugar, and vanilla.
  4. In a small bowl, combine the oats, flour, baking soda, and salt.
  5. Combine the dry ingredients with the wet and mix until well combined.
  6. Fold the raspberries. Frozen raspberries are also a great substitute.
  7. Spoon the mixture into the muffin tray and bake for 15-20 minutes until golden brown.
  8. Allow to cool and enjoy!
