Mom’s Potato Salad

INGREDIENTS:

  • 10 lb bag of potatoes
  • 4-6 celery stalks, diced
  • diced dill pickles
  • 1 onion (red or yellow) diced
  • 1 dozen hard-boiled eggs, chopped
  • 3 cups mayonnaise
  • 3 Tbs mustard
  • 3/4 cup pickle juice
  • 2- 1/2 tsp salt
  • 3/4 tsp garlic salt
  • 3/4 tsp salt
  • 1- 1/2 tsp dill weed

 

DIRECTIONS

  1. Scrub potatoes and place them in a large pot, cover with water, and bring to a boil. Boil until potatoes are tender. (best way to tell is poking potato with a fork)
  2. Rinse potatoes in cold water. peel and cut into chunks, then place in a large bowl.
  3. Peel and dice the hard-boiled eggs.
  4. Dice up celery, onions, and pickles, and add to the bowl of potatoes.
  5. In a small bowl, combine the mayo, mustard, pickle juice, and seasonings.
  6. Pour over potatoes and toss until it’s well coated. if needed, add more pickle juice or seasonings.
