INGREDIENTS:
- 10 lb bag of potatoes
- 4-6 celery stalks, diced
- diced dill pickles
- 1 onion (red or yellow) diced
- 1 dozen hard-boiled eggs, chopped
- 3 cups mayonnaise
- 3 Tbs mustard
- 3/4 cup pickle juice
- 2- 1/2 tsp salt
- 3/4 tsp garlic salt
- 3/4 tsp salt
- 1- 1/2 tsp dill weed
DIRECTIONS
- Scrub potatoes and place them in a large pot, cover with water, and bring to a boil. Boil until potatoes are tender. (best way to tell is poking potato with a fork)
- Rinse potatoes in cold water. peel and cut into chunks, then place in a large bowl.
- Peel and dice the hard-boiled eggs.
- Dice up celery, onions, and pickles, and add to the bowl of potatoes.
- In a small bowl, combine the mayo, mustard, pickle juice, and seasonings.
- Pour over potatoes and toss until it’s well coated. if needed, add more pickle juice or seasonings.
