Minty Cantaloupe and Cherry-Plum Fruit Salad

INGREDIENTS:

  • 3 cups chopped cantaloupe
  • 8 oz pitted & halved cherries
  • 2 plums, pitted and sliced
  • Juice of 1 lime
  • 1/4 tsp vanilla extract
  • 2 Tbs sugar
  • fresh mint leaves, minced

 

DIRECTIONS:

  1. Combine cantaloupe, cherries, and plums in a bowl.
  2. In a small bowl mix minced mint leaves with sugar. mix to dampen the sugar.
  3. Add the mint-sugar mixture to the bowl of fruit.
  4. Add vanilla extract and lime juice, then stir to combine
  5. Let it sit for 15 minutes at room temperature to release its juices before serving.
