INGREDIENTS:
- 3 cups chopped cantaloupe
- 8 oz pitted & halved cherries
- 2 plums, pitted and sliced
- Juice of 1 lime
- 1/4 tsp vanilla extract
- 2 Tbs sugar
- fresh mint leaves, minced
DIRECTIONS:
- Combine cantaloupe, cherries, and plums in a bowl.
- In a small bowl mix minced mint leaves with sugar. mix to dampen the sugar.
- Add the mint-sugar mixture to the bowl of fruit.
- Add vanilla extract and lime juice, then stir to combine
- Let it sit for 15 minutes at room temperature to release its juices before serving.
