INGREDIENTS:
- 1 (9-12) oz package of fresh or frozen cheese tortellini
- 1 lb ground Italian sausage
- 1 chopped green bell pepper
- 1 chopped onion
- 1 (14oz) can Italian-style diced tomatoes
- 1 (24 oz) jar marinara sauce
- 2 garlic cloves minced
- 2 cups shredded mozzarella cheese
DIRECTIONS:
- Preheat oven to 350°F
- Boil a large pot of water and cook cheese tortellini they float to the top and are hot through, about 6-7 minutes, drain, and set aside.
- To your saucepan add sausage, onion, and green bell pepper. Cook and crumble sausage until the sausage is completely browned. Drain the grease.
- Pour the jar of marinara sauce and diced tomatoes into the sausage mixture.
- Add minced garlic and simmer the mixture simmer sauce for 30 minutes
- Gently fold the cooked tortellini into the sauce. Then pour the sauce mixture into a 9×13 baking dish and top with the mozzarella cheese.
- Bake until the cheese is golden brown, 20-30 minutes.
