Irish Soda Bread

INGREDIENTS:

  • 2 Cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking Soda
  • 2 TBS Brown sugar
  • ¼ tsp salt
  • 3 TBS butter
  • 1 beaten egg
  • ¾ cup buttermilk
  • ½ Cup raisins

 

DIRECTIONS:

  1. Combine the flour, baking powder, baking soda, brown sugar, and salt in a mixing bowl.
  2. Cut in the butter until the mixture is crumbly.
  3. In a separate small bowl mix the beaten egg, raisins, and buttermilk, and add to the flour mixture. Stir until moistened.
  4. On a lightly floured surface, knead gently. Try not to over-knead the dough. (about 10 to 12 strokes)
  5. On a greased baking sheet, shape the mixture into a 6-inch round loaf.
  6. Cut a cross about 4 inches wide, and ¼ inch deep, to the top.
  7. Brush with an egg wash.
  8. Bake at 375 F for 35 minutes or until golden brown.
