INGREDIENTS:
- 1 lb. elbow macaroni
- 1/3 cup grated yellow onion
- 1 to 1/2 grated carrot
- 2 cups mayo
- 1/4 cup apple cider vinegar
- 1/3 cup milk
- 1/4 cup brown sugar
- 1 tsp salt
- 1 tsp ground black pepper
- 1 cup or around 7/8 chopped green onions
DIRECTIONS:
- Cook the macaroni following the directions on the package.
- Drain the macaroni and add to a large bowl.
- Add the apple cider vinegar, grated carrot, and onion to the bowl and mix well.
- Have the macaroni cool, and stir occasionally. While it’s cooling, prepare the dressing.
- Whisk the mayo, milk, brown sugar, salt, and pepper in a small bowl.
- After 15 minutes of the macaroni cooling stir in the dressing.
- Add in the green onions and mix.
- Cover the bowl and chill for at least a few hours before serving.
