Hawaiian Macaroni Salad

INGREDIENTS:

  • 1 lb. elbow macaroni
  • 1/3 cup grated yellow onion
  • 1 to 1/2 grated carrot
  • 2 cups mayo
  • 1/4 cup apple cider vinegar
  • 1/3 cup milk
  • 1/4 cup brown sugar
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 cup or around 7/8 chopped green onions

 

DIRECTIONS:

  1. Cook the macaroni following the directions on the package.
  2. Drain the macaroni and add to a large bowl.
  3. Add the apple cider vinegar, grated carrot, and onion to the bowl and mix well.
  4. Have the macaroni cool, and stir occasionally. While it’s cooling, prepare the dressing.
  5. Whisk the mayo, milk, brown sugar, salt, and pepper in a small bowl.
  6. After 15 minutes of the macaroni cooling stir in the dressing.
  7. Add in the green onions and mix.
  8. Cover the bowl and chill for at least a few hours before serving.
