INGREDIENTS:
- 4 lbs russet potatoes, cut into 1/4 – 1/2 cubes
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 tsp chili powder
- 6 Tbs cubed butter
- 8 oz shredded Colby jack cheese
- 8-10 oz ranch dressing
DIRECTIONS:
- Preheat oven to 400°F. Lightly grease a 9×13 baking dish.
- Cube up potatoes and add them to the baking dish. Season with chili powder, salt, and pepper.
- Add cubed butter evenly over the top of the potatoes.
- Cover the baking dish with aluminum foil, and bake for 1 hour, until the potatoes are tender.
- Remove from oven, and mix in the cheese and ranch dressing.
- Continue cooking for 10 minutes, or until the cheese is melted and bubbly.
