Cafe Rio Sweet Pork (Slow Cooker Copycat Recipe)

Ingredients (Marinade):

  • 2 lb pork butt
  • 1 cup Dr. Pepper (not diet – Coke works too!)
  • 1/4 cup brown sugar

 

Directions (Marinade):

  1. Combine pork, soda, and brown sugar in a heavy zip-top bag.
  2. Seal and marinate in the fridge for a few hours or overnight

 

Ingredients (Slow Cooker):

  • Marinated pork (drained)
  • 1 cup Soda
  • 1/4 cup water
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder

 

Directions (Slow Cooking):

  1. After marinating, drain the liquid and place the pork into the slow cooker.
  2. Add soda, water, and spices
  3. Cook on high for 3–4 hours or low for 6 hours, until pork is tender and shreds easily.
  4. Remove the pork, drain the liquid, shred, and return the shredded pork to the slow cooker.

 

Ingredients: Sweet Pork Sauce

  • 1 cup soda
  • 3/4 cup brown sugar
  • 10 oz can of red enchilada sauce
  • 4 oz can diced green chilies
  • 1 tsp chili powder

 

Directions:

  1. In a blender, blend soda, brown sugar, enchilada sauce, green chilies, and chili powder.
  2. Pour sauce over the shredded pork in the slow cooker.
  3. Cook on low for 2 hours, stirring occasionally

 

Notes:

We love having the pork in burritos, tacos, and as a salad. Enjoy!
