INGREDIENTS
- 4 medium bell peppers
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 large eggs
- 1/4 cup Mexican-blend shredded cheese
DIRECTIONS
- Preheat oven to 400°F
- Cut bell peppers in half through the stem end and remove ribs and seeds.
- Place bell peppers cut side up sprinkled with salt and pepper on a pan sprayed with cooking spray.
- Bake peppers for 15 minutes then crack 1 egg into each pepper.
- Season with salt and pepper and top with cheese.
- Bake again for 15 – 20 minutes or until the egg whites are set.
- Spice it up with some cilantro if you want and enjoy!
