Breakfast Stuffed Peppers

INGREDIENTS

  • 4 medium bell peppers
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 8 large eggs
  • 1/4 cup Mexican-blend shredded cheese

 

DIRECTIONS

  1. Preheat oven to 400°F
  2. Cut bell peppers in half through the stem end and remove ribs and seeds.
  3. Place bell peppers cut side up sprinkled with salt and pepper on a pan sprayed with cooking spray.
  4. Bake peppers for 15 minutes then crack 1 egg into each pepper.
  5. Season with salt and pepper and top with cheese.
  6. Bake again for 15 – 20 minutes or until the egg whites are set.
  7. Spice it up with some cilantro if you want and enjoy!
