INGREDIENTS:
- 12 eggs
- 1-lb Cooked ground sausage, fried bacon, or both!
- 1 diced onion
- 1 red or green bell pepper diced
- Diced mushrooms
- 1-2 cups Baby spinach
- 1-1/2 cup cheddar cheese, feta crumbles or any cheese of your choosing
- Salt & Pepper.
DIRECTIONS:
- Preheat oven to 375 F, and spray the muffin tin with cooking spray.
- Cook the sausage over medium-high heat until cooked through. If you’re using bacon, crumble it after cooling.
- Beat the eggs in a large bowl with salt & Pepper and any favorite seasoning of your choice.
- To your sprayed muffin tin, add a layer of your protein to the bottom of each cup. On top add your veggies and cheese.
- Pour the egg mixture into each muffin cup.
- Bake for 20 minutes until puffy.
