Baked Omelette Muffin Cups

INGREDIENTS:

  • 12 eggs
  • 1-lb Cooked ground sausage, fried bacon, or both!
  • 1 diced onion
  • 1 red or green bell pepper diced
  • Diced mushrooms
  • 1-2 cups Baby spinach
  • 1-1/2 cup cheddar cheese, feta crumbles or any cheese of your choosing
  • Salt & Pepper.

 

DIRECTIONS:

  1. Preheat oven to 375 F, and spray the muffin tin with cooking spray.
  2. Cook the sausage over medium-high heat until cooked through. If you’re using bacon, crumble it after cooling.
  3. Beat the eggs in a large bowl with salt & Pepper and any favorite seasoning of your choice.
  4. To your sprayed muffin tin, add a layer of your protein to the bottom of each cup. On top add your veggies and cheese.
  5. Pour the egg mixture into each muffin cup.
  6. Bake for 20 minutes until puffy.
