Rice Pilaf

INGREDIENTS:

  • 1 cup rice
  • ½ cup orzo
  • 2- 1/2 cups chicken broth or stock
  • ½ Tbs butter
  • ½ Tbs shortening
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1 minced garlic clove
  • Salt & Pepper to taste

 

DIRECTIONS:

  1. Brown orzo in butter and shortening until golden brown.
  2. Add rice, broth, and vegetables and bring to a boil.
  3. When boiling, cover and turn down to simmer for 20 minutes.

 

Notes: I like to add diced mushrooms as well. This also freezes well.
