INGREDIENTS:
- 1 cup rice
- ½ cup orzo
- 2- 1/2 cups chicken broth or stock
- ½ Tbs butter
- ½ Tbs shortening
- 1/4 cup diced onion
- 1/4 cup diced celery
- 1 minced garlic clove
- Salt & Pepper to taste
DIRECTIONS:
- Brown orzo in butter and shortening until golden brown.
- Add rice, broth, and vegetables and bring to a boil.
- When boiling, cover and turn down to simmer for 20 minutes.
Notes: I like to add diced mushrooms as well. This also freezes well.
