Italian Christmas Cookies

INGREDIENTS:

  • 6 eggs
  • 1 cup sugar
  • 1 cup melted shortening
  • 3 Tbs Lemon extract (or anise start with 1-1/2 TBS)
  • 2 TBS baking Powder
  • 4 Cups flour
  • pinch of salt

 

Frosting:

  • 3 cups powdered sugar
  • 2 Tbs milk
  • lemon extract (cap full)
  • Mix to the thickness you like.

 

DIRECTIONS:

  1. Preheat oven to 400 degrees
  2. line a baking sheet with parchment paper (this is optional)
  3. In a mixing bowl beat the eggs with sugar, extract, and melted warm but not hot shortening.
  4. Add in baking powder and salt with the flour one cup at a time. add in more flour 1/4th cup at a time if the dough is too sticky.
  5. Roll into balls or ribbon shape and place on baking sheet.
  6. Bake for 7 minutes. The bottoms should be a light golden brown at the bottom.
  7. When cookies have cooled down dunk them into the frosting.
  8. Add sprinkles to the top quickly after the cookies have been dunked into the frosting. Enjoy!
