INGREDIENTS:
- 6 eggs
- 1 cup sugar
- 1 cup melted shortening
- 3 Tbs Lemon extract (or anise start with 1-1/2 TBS)
- 2 TBS baking Powder
- 4 Cups flour
- pinch of salt
Frosting:
- 3 cups powdered sugar
- 2 Tbs milk
- lemon extract (cap full)
- Mix to the thickness you like.
DIRECTIONS:
- Preheat oven to 400 degrees
- line a baking sheet with parchment paper (this is optional)
- In a mixing bowl beat the eggs with sugar, extract, and melted warm but not hot shortening.
- Add in baking powder and salt with the flour one cup at a time. add in more flour 1/4th cup at a time if the dough is too sticky.
- Roll into balls or ribbon shape and place on baking sheet.
- Bake for 7 minutes. The bottoms should be a light golden brown at the bottom.
- When cookies have cooled down dunk them into the frosting.
- Add sprinkles to the top quickly after the cookies have been dunked into the frosting. Enjoy!
