INGREDIENTS:
- 3 lb pork loin
- 1 Tbs olive oil
Spice Rub
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried rosemary
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- salt and pepper to taste
Honey Garlic Glaze
- 1/4 cup honey
- 4 cloves minced garlic
- 3 Tbs soy sauce
- 1 Tbs olive oil
- 1 Tbs Dijon mustard
DIRECTIONS:
- Preheat oven to 375°F.
- Pat pork loin dry with paper towels. Mix a small bowl, the garlic powder, paprika, onion powder, thyme, rosemary, salt, and pepper. Rub spices all over the pork loin.
- In a pan, sear pork loin until all sides are brown.
- In another bowl, mix garlic, honey, soy sauce, mustard, and oil (if too thick, add some more soy sauce).
- Brush the sauce over the pork loin and roast for 25 minutes.
- While the roast is cooking, toss the vegetables with Tbs of olive oil and the rest of the honey mixture. and throw it in the oven.
- Tent a piece of foil over the pork so it doesn’t burn, and put it back in the oven for 25 to 30 minutes.
- Have the roast reach an internal temperature of 145°F. Serve together and enjoy!
