Honey Glazed Rosemary Pork Tenderloin

INGREDIENTS:

  • 3 lb pork loin
  • 1 Tbs olive oil

Spice Rub

  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried rosemary
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • salt and pepper to taste

Honey Garlic Glaze

  • 1/4 cup honey
  • 4 cloves minced garlic
  • 3 Tbs soy sauce
  • 1 Tbs olive oil
  • 1 Tbs Dijon mustard

 

DIRECTIONS:

  1. Preheat oven to 375°F.
  2. Pat pork loin dry with paper towels. Mix a small bowl, the garlic powder, paprika, onion powder, thyme, rosemary, salt, and pepper. Rub spices all over the pork loin.
  3. In a pan, sear pork loin until all sides are brown.
  4. In another bowl, mix garlic, honey, soy sauce, mustard, and oil (if too thick, add some more soy sauce).
  5. Brush the sauce over the pork loin and roast for 25 minutes.
  6. While the roast is cooking, toss the vegetables with Tbs of olive oil and the rest of the honey mixture. and throw it in the oven.
  7. Tent a piece of foil over the pork so it doesn’t burn, and put it back in the oven for 25 to 30 minutes.
  8. Have the roast reach an internal temperature of 145°F. Serve together and enjoy!
