Chicken, Broccoli, and ‘Rice’ Casserole

INGREDIENTS:

  • 1 (12-16oz ) package of frozen cauliflower
  • 1 (10 oz) package of thawed frozen chopped broccoli
  • 2 cooked & chopped chicken breasts
  • 2-3 cloves of minced garlic
  • 1 (16oz) jar alfredo sauce
  • 2 cups shredded cheddar cheese (use really what you prefer)
  • 1 onion soup mix packet

 

DIRECTIONS:

  • Preheat oven to 350°F (175° C)
  • Thaw the bag of frozen chopped broccoli
  • If your frozen cauliflower bag is steamable, steam up according to package directions.
  • Chop up cooked cauliflower and place in a 9×13 pan or smaller
  • Add thawed broccoli on top of chopped cauliflower
  • Add the chopped chicken on top of the broccoli
  • On the stove in a small pot on medium heat, add the alfredo, garlic, onion soup packet and 1 cup of the cheddar cheese. Cook and stir until hot and melted, about 2 minutes.
  • Spread the alfredo mixture over the chicken evenly.
  • Top the casserole with the remaining 1 cup of cheese.
  • Bake for 30-40 min uncovered until bubbly on top.
