INGREDIENTS:
- 1 (12-16oz ) package of frozen cauliflower
- 1 (10 oz) package of thawed frozen chopped broccoli
- 2 cooked & chopped chicken breasts
- 2-3 cloves of minced garlic
- 1 (16oz) jar alfredo sauce
- 2 cups shredded cheddar cheese (use really what you prefer)
- 1 onion soup mix packet
DIRECTIONS:
- Preheat oven to 350°F (175° C)
- Thaw the bag of frozen chopped broccoli
- If your frozen cauliflower bag is steamable, steam up according to package directions.
- Chop up cooked cauliflower and place in a 9×13 pan or smaller
- Add thawed broccoli on top of chopped cauliflower
- Add the chopped chicken on top of the broccoli
- On the stove in a small pot on medium heat, add the alfredo, garlic, onion soup packet and 1 cup of the cheddar cheese. Cook and stir until hot and melted, about 2 minutes.
- Spread the alfredo mixture over the chicken evenly.
- Top the casserole with the remaining 1 cup of cheese.
- Bake for 30-40 min uncovered until bubbly on top.
